The one where I make Guacamole.

I spent my weekend in the kitchen.
Or at the store.
I had this great idea to make guacamole.
I normally get it from Chili's. It's delicious, but expensive. They charge a dollar for a dollop.
A dollop for me is three chips worth. THREE.
I searched the web, found several recipes.
Did you know there is about 100 different way to make guac?
Some use lime juice.
Some use lemon juice.
Some use garlic, others use white onions not red.
Then there is the whole, "is this avocado ripe enough?" thing that I've never even ever bought an avocado much less know when it's ripe or not.
I made a few different batches. None tasted the way I wanted them to taste.
I'm sick of guacamole.
My stomach has turned againest me and refuses to smell, or SEE another green dip in quite some time.
What makes this funny...
Saturday My Mom invites us over for PEA SOUP. (When I say Mom I mean my in-law. I call MY mom; Mother. For the record.)
I love Pea Soup.
I knew Mom had a ham bone and was going to make it soon. It was suppose to rain all day Sat. It didn't, it rained Sunday instead.
Well, she made a big ol'e pot of soup, homemade bread, Gloria brought her lemon bars...
I ate 2 helpings and I lost count on the bread...
More green.
Then last night Roo became a joker.
He is SO animated. I mentioned he's going to be another Jim Carrey.
And asked him to say "Let me show you something." (You need to go way back to get this...I'm talking In Living Color.)
He does, and it is JUST like Fire Marshal Bill...
Oh, man did I laugh, and the more I laughed the more he kept saying it, the more he said it the harder I laughed. The whole family was laughing and crying.
My poor stomach took a beating this weekend.
But for some reason I can't let the guacamole thing go.
I need to find a good recipe.
Anyone have any suggestions?

  2. I'm not a guac fan, mainly cause I can't stand avacado. It's the taste and the feel on my tongue. I'm weird, I know. ;)

    My fav place to find recipes is food TV -- or ask Misti! She's a cooking whiz!

  3. I love Guac! I made some once with a seasoning packet and really liked it! It does look really gross! I would have never tried it except a friend made some years ago and I trusted him. Maybe I should try to get his recipe! Chili's has the BEST fajitas!! They are not complete with out the guac! Our closest chili's is 70 miles away. Boo Hoo!

  4. being from the southwest orginally...I of course LOVE quac and salsa. I make each fresh EVERY week!! yes, we love the stuff, in fact I am having tacos tonight and have all the stuff to make fresh salsa and quac. once you make your own salsa and see how easy/good it is, you will never buy it again!!!

    Salsa:

    1/2 purple onion
    handful of cilantro
    1 clove garlic or tsp minced garlic
    1 T jalapenos or 1 fresh (for med hot)
    1 sm can diced green chilis
    1 tsp salt
    1/2 of a lime, squeezed
    1 28 oz can diced tomatoes

    whirl onion, cilantro, garlic, jalapeno, green chilis, salt, and lime juice in a food processor till mixed but still chunky. Add tomatoes and whirl just a bit more. Taste to see if needs more salt or lime. Done!!

    Guacamole

    2-4 avocados (depending on how much you need) they are ripe when the skin is dark and they are soft to squeeze

    mush up the avocado with a pastry blender, potato masher or fork till smooth but chunky. squeeze the other 1/2 of the lime over the avocados (this adds flavor and also keeps it from turning brown) Mix in several spoonfuls of your salsa (all the spices are in there!!) Mix it all up and serve!!! you may need to add more salt but it is all about your tastes!!!

  5. i, like sara, make fresh guac every week when they're in season. we LOVE it!! i have found after trying it several diferent ways, that if the avocado is good, all you need is some lemon or lime juice (i cant really tell a difference, so i just use what i happen to have on hand) and a little salt. too much stuff in it and you cant taste the avocado anymore. sometimes i'll throw in some chopped tomatoes, but usually we do it plain jane.
    as far as telling if they're ripe, i learned on food network, that you can flick off the little nub at the top of the avocado (where it was attached to the tree) and look at the color underneath. you want it to be a light to medium green and the avocado should just very slightly give when you apply pressure. if you're not going to use them for a few days, get firm ones.

  6. Guac is my fav! I make a quick batch in my food processor.

    2 or 3 avocados
    onion
    garlic salt
    tomato
    lime juice

    I wish i could tell you how mush of each I put in, but I just wing it! So Yummy!
